Produce Fit Tip

20150209-160318-57798042.jpg

Grocery shopping can be a real drag. Today I found myself apologizing to the cashier because I had mostly fresh produce. I felt bad that he had to key in all of the produce numbers, but he was a good sport about it.

This is my quick tip for less waste. Plus I find that I eat more fruits and vegetables since they are clean and ready to eat. Instead of throwing all of my produce into the crisper drawers of the refrigerator I wash, chop and place in glass containers. Glass canning jars serve as a great cost effective storage tool.

Spend an extra 20 minutes doing this quick fit tip to help save money, time, and your waistline!

Sweet Green Shake

Dairy-free Sweet Green Shake

Dairy-free Sweet Green Shake

I am in LOVE with blended drinks!  After waking up this morning I had my usual 8 ounces of lemon water. My neighbor and I walked 3.5 miles, and when I got back to the house I was craving this delicious dose of nutrition.  I decided to make this drink dairy-free;  however, you could add some plain Greek yogurt if you needed a little extra protein.

What you need

1. 3/4 Cup of WATER

2. One Handful of SPINACH

3. One slice of PINEAPPLE

4. One frozen BANANA

5. One slice of LIME

6. One cup of ICE

water, spinach, pineapple, banana, lime, ice

water, spinach, pineapple, banana, lime, ice

Place all of the listed ingredients into the blender in the order listed.  Blend until you reach your desired consistency.

Loaded with vitamins and nutrients to start your day off right!

We can’t all love spinach, so this is great way to sneak it in to your family’s bellies.  The more good food you eat, the more your body will crave!  Enjoy

Southwest Chicken Vegetable Soup

Southwest Chicken Vegetable Soup

Southwest Chicken Vegetable Soup

I have been craving soup since the days are getting cooler.  I searched pinterest for the perfect Healthy Crockpot soup recipe.  I never found exactly what I was looking for so I decided to make my own.  This recipe is so simple, so easy, and SO loaded with flavor.  My husband said to put this on our saved recipe list, so I thought I would share it with you.

Ingredients:

1/2 pound of chicken breast tenders

16 oz of reduced sodium chicken broth

16 oz of medium salsa

1/4 onion chopped

1 can of black beans

1 can of corn

1 can of rotel

1 packet of white chicken chili spice mix

Directions:

Place chicken breast tenders in the bottom of slow cooker.  Add all of the remaining ingredients on top of the chicken breast tenders.  Mix in the white chicken chili spice mix.  Cover your slow cooker and cook on low for 6.5 hours.

After 6.5 hours your house will be filled with and incredible smell.  Now you can remove the chicken and shred it with two forks.  Place the shredded chicken back in the slow cooker and stir all ingredients together.

Enjoy!

This recipe makes approximately 2 quart jars.
